Easy Breakfast Sandwich!

How are you doing!? I’ve been good! Been super busy with work, school, and life! I will write a blog post dedicated to that! Anyway, I wanted to share something big with you…

I have a huge secret…. and can you guess what it’s about?

Breakfast sandwiches!

My sandwich is a copycat version of Mc Donalds egg sausage mc muffin with my own twist to it!

What went down!

I used a sausage link and pulled it out of the casing and just rounded it up and smashed it like a patty! However, you can purchase the ground sausage either packaged or fresh from the market! I have found that Sprouts sells delicious chicken sausage and breakfast sausage. You can use pork, chicken, beef, or turkey!

Next, I fried an egg in a pan and overcooked it! Overcooking it gives it that Mc Muffin tastes lol.

I then toasted an English muffin and assembled my sandwich. I added a slice of American cheese and spinach. And finally, enjoy! These sandwiches are perfect to make and freeze for the week if you’re on the go or if you simply want to enjoy a homemade English muffin sandwich!

Breakfast Sandwich

Runtime: 30 minutes

  • 1 pound of breakfast sausage meat
  • American cheese slices
  • English muffins
  • Spinach
  • 2 eggs

 

  1. Assemble round balls of the sausage meat and make them into patties. Cook for 8-10 minutes until no longer red and brown.
  2. On a non-stick pan spray with some olive oil (or whichever your preference). Cook your eggs sunny side up over hard.
  3. Toast your English muffins and assemble your sandwiches together!
