Pumpkin Bread

Hello,

I hope you are well. I cannot believe we are already in September. Summer days definitely are behind me and so sad it went by so fast.

Luckily, we are now headed towards the jam packed holiday seasons!

Autumn is near and what a better way than to commemorate the grand occasion with a pumpkin recipe that will knock your socks off!

Okay, it’s not actually explosive, but it’s easy bread you can make in under 3 hours…

Is it bread or is it a loaf? I mean it doesn’t rise, unless you add some yeast… And it’s totally unnecessary for you to add it anyway because this monster pumpkin bread will rise on it’s own.

Think about Charlie Brown and the grand pumpkin. Just like the shadow of the pumpkin is shown, the shadow of your bread will grow!

Yummy, I mean how can you wait for a slice?! Look at these cute hands my little pickers are obviously going for the chocolate chunks because who cannot resist.
Okay so finally I will share my recipe with you!

Easy Pumpkin Bread

  • Servings: 6-8
  • Print

Ingredients

  • 2 cups of baking flour
  • 1/2 tsp of salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tbsp Pumpkin Spice
  • 1 stick of unsalted butter
  • 2 eggs
  • 1 can of 16 oz pure pumpkin puree
  • 1/2 cup of sugar
  • Chocolate chips

Directions

  1. Preheat your oven to 350 degrees. In a bowl, add the eggs, melted butter, sugar, and can of pumpkin puree. Mix until egg is well combined.
  2. In a separate bowl add the dry ingrediants. This includes the salt, flour, baking soda & powder, and pumpkin spice.
  3. Mix together the wet and dry ingrediants. It should start to form a sticky texture and that is fine!! Also, you can add as many chocolate chips you like.
  4. Once all ingredients are mixed together, spray your tin loaf pan with coconut spray or your can also butter it up. 5. Finally bake for about 45-60 minutes. Use a toothpick to insertt through the middle so that your loaf is baked evenly.

Hey guys,

It’s definitely been a while since I last wrote on my blog. What can I say, I’m an awful writer. haha… Anyway, a little update to my current life.

I have been taking some time to myself to really figure out what I want with my life. For a long time while I was in college my whole mindset was study, work, and get it done. Now that I am finished with school I wanted to hit the pause button. I asked myself what I wanted to do and what am I going to do. For the past 5 to 6 years I have been working nonstop with school and jobs. I just felt burnt out.

I’m sure a lot of people will say “oh you had it easy,” or stuff like “you’re too young to complain about being tired.” Honestly, my whole life has been in a rush. Always on the go, always trying to find solutions to problems at home or in life. Always this or that. I could tell you hundreds of stories about why I feel the way I feel. In all seriousness, I’ve just been too serious about everything. I have not given myself the chance to stop and enjoy. Sometimes I wonder if I even know what enjoyment even means.

In other news: Michelle has started going to preschool!

Let me tell you something. Mom’s you will cry when you drop off your child even if they do not cry. I remember dropping her off and staying with her for a while before it was time for me to let my little bird out of my nest for the day.

She was really excited and all I wanted to do was hold her so close to myself. I was holding back my tears as I was there with her. Then it was time. She went off to play with some kids and I walked back to my car. I sat there for about 20 minutes crying!!! I was wondering where my little baby has gone… She has grown up so fast and I could not believe she was already in school.

Time really does fly when you are having fun. I cherish every day I have with her even when she is fighting with me. My baby will always be my baby!

Month Reflections

Hello, my friends!

I hope you are doing well! I haven’t updated my blog in a while and honestly, I’ve just been making excuses to not do anything. I don’t know about you, but I’m just being lazy!!

Last month was super hectic, so let me catch you up.

May 2018 

I remember the day before May 1st I was on social media and saw that Justin Timberlake meme It’s gonna be May….” All I could think about was “wow we are almost halfway through the year, finals are coming up, and graduation is just around the corner…..” Well little did I realize that with a blink of an eye that entire month would flash by so quickly I didn’t even get to savor it completely.

I was stressing over my last couple finals and graduation details. When the day finally arrived it felt like a dream. Graduation was bittersweet and a wonderful ending to my undergrad career. I saw all my classmates probably for the last time ever. (I wish you guys luck and hope you are all doing well if you ever happen to stumble upon my ramblings and nonsense on the internet lol….).

Anyway, what I’m trying to get at is that I literally mentally checked out from doing anything because I need a break lol. (Okay not really, cuz I’m on social media all the time lol… -insert laughing emoji-)

During my college years, I spent my entire time working and studying because I wanted to get my degree done as fast as possible. Now that I reflect on it, I didn’t really push myself to enjoy my college experience that much. I mean I went to some cool parties and events, though it wasn’t regularly haha (I’m antisocial sometimes and I like to sleep and be home….. woops.)

 

 

 

Okay, fast forward to June 12!

Now that I’m finished with school I can really dive into my creativity and create fun stuff to share with you.

 

 

June 2018

This month has been fun. I’ve been spending my money like crazy cuz why the heck not! Just treating myself to mani-pedis, massages, self-care kind of stuff. I even got to visit the Santa Barbara Zoo with my fam.

Mindfulness

Hello, my friends,

It’s been a good few weeks since I have written a blog post. To be completely honest I have been doing nothing. I’ve been posting a few pictures on my Instagram feed about my delicious dinners and meals. Though, I have not had the motivation to do anything.

Literally, laying in bed and doing nothing because I don’t feel like going outside or doing any type of activity. I’m beginning to sound repetitive, but I want you to understand that I’m not being lazy.

I’m simply allowing my mind to be free. I’m trying to not worry as much about things that don’t matter. I’m trying to live in the moment. I’m indulging in spare time because we should be able to seize any opportunity of free time.

I have mentioned in my previous blog entries on my other site that I suffered from severe anxiety.

I used to get anxiety attacks very often. I’ve had good days and bad ones, but always try to keep a positive outlook on life. Even when my luck ends and I’m at the bottom I managed to get up and just slowly figure it out.

Anyway, I felt inspired to write today because anxiety was trying to come back today and I said no way!

My goals for the year are:

  1. BE MORE MINDFUL
  2. Learn to be happy and healthy!
  3. HAVE FUN!

 

So, here’s to kicking anxiety in the butt and just living life my friends!

Happy 2018!

Hello Friends!

It’s been a pleasure to share with you my images through my Instagram account! I always find myself making up excuses to not work on my website and blog posts when that’s the most I want to share with you all!

I started my blog over a year ago to try a wheat-free diet that didn’t exactly work out. Simply because I kept making excuses to not do things because I’m afraid of actually doing something…. Sounds silly, but all I want to do is share true experiences with you all.

I started my blog on Squarespace because I was inspired by someone else’s blog and asked them for advice. Though I found it challenging when I was trying to put together what I saw in my mind. I then got busy with school, work, and life as you know it. Eventually, I lost aspiration to continue learning and working on my blog.

Anyway, I have now switched over to WordPress and I’m starting out fresh!

I have a lot of stuff I want to share!
